Loading data with IDOC Load stage

Hi,

I am trying to load data using SAP IDOC pack. I am having the following dbouts :

1. In IDOC Load stage, when I select a particular IDOC type, will I be able to select only one segment at a time.

2. If I choose a particular segment of IDOC and my mapping doesn't include all the fields in the IDOC, what should I mention for the empty fields of the segment.
