Different versions of DataStage on the same box

Can we have DS 7.5 and DS 8.1 installed and running on the same Unix box?

Yes, but you will need to keep two directories of Datastage. One with 7.5 and the other with 8.0. You can toggle between them using the Multi-Client Module.

And for the server the answer is also yes, but the 7.x version will need to be an -itag install using a non-default memory key. Version 8.x does not support -itag install and uses only the default memory key (which means also that you can not have two 8.x versions on the same DataStage server machine).
