Am I blind, or is there no documentation on the Pivot Stage in EE?

There is documentation for Pivot stage.
You should have a folder structure on your desktop close to this:
C:\Program Files\Ascential\DataStage7.5.1\Docs and with in that folder there is a pdf named PIVOT.

I think you'll find pivot.pdf is the manual for the server job Pivot stage. But they're very similar in operation.
