Environment Variables

How do we define Environmental variables at project level.
I have a requirement to set Enviromental variables like DSN Name,UserID,Password,Table names,Absolute Paths etc and pass them as job parameters for each job.
here Password should be Encrypted.
Shall i define all the above environment variables in job properties-->Add Environment variables-->New.
Or is there any way to set these in DataStage Admistrator for particular project?
