The datastage CDs contain a tutorial that you can go through. I don't remember exactly where it is but they are not too hard to find. They basically go through creating a simple project using a database that they also provide. It is pretty basic stuff but it is what I used when I started. It provides a pretty good foundation on how to create and develop Datastage jobs.
