We plan to upgrade our DataStage from Server edition to Enterprise edition (formerly PArallel Extender). I would like some input on:
- how it can be done (very important)
- possibility of such
- benefits
- drawbacks
- (anything else?)

You already have Enterprise Edition. As soon as you license it, all the parallel stages will magically appear.
That is the end of the magic, however; your server jobs will remain as they are - server jobs, and will continue to work the same way that they do now.
Parallel jobs, as you will discern by wandering through the forums, work very differently. The benefit is that parallel jobs give is the ability to process vastly huge volumes of data. For the smaller tasks, server jobs are probably OK to leave as they are.
Why are you considering this move? There is one major drawback; the parallel job environment is very different from the server job environment so there is a substantial re-training requirement. Something like the Server to Parallel Transition Lab offered by DSXchange Learning Center would be ideal. IBM does not have a transition offering - instead they train students in parallel jobs based on a "no knowledge" entry level criterion.
