We are currently in the process of changing quite a few of our field sized in various Oracle Databases. The difficult task is finding out what fields are used in what jobs. I run the Usage analysis for the tables and sometimes I get the resulted jobs. However, some of the table definitions were added after the Job was developed and thus do not return any usage analysis. Is there a way to "reload" the table defs into the job defs so we can easily see where the necessary changes would be?

You could try exporting your jobs to a text file and modifying the text file. You can do a search within the text file for the column name then adjust the column width. Import the jobs to get the changes.
