What make difference when i take sort as seperate stage which i can do it with in specific stage

I have gone through the Dataset,Sequential file,file set but still im in confusion bcoz every stage supports to take multiple files can any one explain with an example

2.What a Copy stage does is it useful only to transfer data from one stage to other
